Ingredients

12 ounces pasta (such as fettuccine or linguine)
Vegetables
2 medium leeks (white and light green parts only), thinly sliced
8 ounces cremini mushrooms, sliced
3 cloves garlic, minced

1/2 cup dry white cooking broth (or vegetable stock)

1 cup shredded Gruyere cheese

Instructions
Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta, reserving a little pasta water, and set aside.
Caramelize the leeks: In a large skillet, heat the olive oil over medium heat. Add the sliced leeks and cook, stirring occasionally, until soft and golden brown, around 10-12 minutes, being careful not to burn them.
Sauté mushrooms and garlic: Add the sliced cremini mushrooms to the skillet with the leeks. Cook for about 5-7 minutes until the mushrooms are tender and browned. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
Deglaze and simmer: Pour in the dry white cooking broth (or vegetable stock) to deglaze the pan, scraping any browned bits off the bottom. Let it simmer for 2-3 minutes to reduce slightly.
Add cream and cheese: Lower the heat and stir in the heavy cream and shredded Gruyere cheese. Stir continuously until the cheese has melted and the sauce is smooth and creamy.
Combine pasta and sauce: Add the cooked pasta to the skillet, tossing gently to coat the noodles evenly with the sauce. If needed, add a splash of reserved pasta water to loosen the sauce.
Season and garnish: Season the pasta with freshly ground black pepper and salt to taste. Sprinkle with chopped fresh parsley if desired. Serve immediately while warm.
Notes
Using the white and light green parts of the leek helps concentrate the flavor without bitterness.
Gruyere cheese can be substituted with Swiss cheese if unavailable, but the flavor will be milder.
Reserving pasta water helps in adjusting the sauce consistency perfectly.
Optional fresh parsley adds a fresh, herbal note to the final dish.
For a vegetarian version, ensure the cooking broth or stock is vegetable-based.
