Ingredients

Jalapenos

  • 1/2 pound jalapeno peppers (about 10-12 average sized jalapenos)

Syrup

  • 1 cup sugar
  • 1/2 cup apple cider vinegar
  • 1 teaspoon chili powder (optional)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon ground ginger

Instructions

  1. Slice Peppers: First, slice the jalapeno peppers into 1/4-inch round slices to prepare them for candying.
  2. Make Syrup: Stir together the sugar, apple cider vinegar, chili powder, turmeric powder, and ground ginger in a pan. Bring the mixture to a quick boil, then reduce the heat to a low simmer until the sugar fully dissolves into a thick, gooey syrup.
  3. Add Peppers: Add the sliced jalapenos to the syrup and mix well to evenly coat all the slices with the syrup.
  4. Simmer Jalapenos: Let the jalapeno slices simmer in the syrup for about 4 minutes. They will darken slightly as they cook and absorb the sugary, spicy flavors.
  5. Jar the Candy: Transfer the candied jalapeno peppers to clean jars and pour the remaining syrup over them to fill the jars.
  6. Store: Cover and refrigerate the jars. Though you can enjoy them immediately, it's best to let the flavors develop for at least 1 week before eating. Stored properly, they keep well in the refrigerator for up to 3 months.
