Ingredients

Brownie Base

  • 1 Box double-chocolate brownie mix (18 ounces)
  • ¼ cup whole milk
  • 1 large egg, beaten
  • stick unsalted butter (⅓ cup), melted, plus more for greasing
  • ½ cup roasted and salted almonds, chopped or thinly sliced
  • ½ cup mini marshmallows

Toppings

  • 20 caramel candies, unwrapped
  • Remaining ½ cup mini marshmallows
  • Vanilla ice cream, for serving

Instructions

  1. Heat the Campfire or Grill: Ignite a campfire or charcoal grill and allow it to reach medium heat, ensuring a steady source of warm coals for cooking.
  2. Prepare the Skillet: Generously grease a 10-inch cast iron skillet with butter to prevent sticking and enhance flavor.
  3. Mix Brownie Ingredients: In a mixing bowl, combine the brownie mix, beaten egg, whole milk, melted butter, roasted almonds, and about half of the mini marshmallows. Stir until all ingredients are thoroughly incorporated.
  4. Transfer to Skillet: Pour the brownie batter mixture into the prepared cast iron skillet, spreading it out evenly.
  5. Add Toppings: Evenly arrange the unwrapped caramel candies and the remaining mini marshmallows on top of the brownie batter.
  6. Position Skillet on Coals: Place the skillet directly onto about 8 warm coals for steady heat from below.
  7. Cover and Top with Coals: Cover the skillet with a second 10-inch cast iron skillet to seal in heat, then place 15 warm coals on top of the covering skillet to cook from above.
  8. Cook and Rotate: Cook the brownies for 25 to 30 minutes, rotating the skillet three times during cooking to ensure even heat distribution and prevent burning.
  9. Test for Doneness: Insert a toothpick into the center of the brownies; they are done when it comes out mostly clean with a few moist crumbs.
  10. Cool and Serve: Allow the brownies to cool for 10 minutes before serving. Enjoy warm with a scoop of vanilla ice cream on the side.

Notes

  • Ensure your campfire has hot, evenly distributed coals before cooking to maintain consistent heat.
  • Rotating the skillet during cooking is essential to prevent hot spots and burning.
  • You can substitute roasted almonds with walnuts or pecans if preferred.
  • For a more intense caramel flavor, use soft caramel candies that melt easily.
  • Adjust marshmallow quantity according to taste for gooier or less sweet topping.
