This Cake Batter Peach Cobbler is a delightful dessert featuring juicy canned peaches topped with a buttery yellow cake mix crust, baked to golden perfection. Easy to prepare and perfect for serving warm with a scoop of vanilla ice cream, it's a comforting treat for any occasion.

Ingredients

Filling

  • 2 cans (21 oz each) peach pie filling

Topping

  • 1 box (13.25 oz) yellow cake mix
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 tablespoon raw coarse sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a 9x13-inch baking dish by spraying it with nonstick spray to prevent sticking.
  2. Prepare the Filling: Pour both cans of peach pie filling into the baking dish, spreading it out evenly to cover the bottom.
  3. Make the Topping: In a medium mixing bowl, combine the dry yellow cake mix with the melted butter. Stir well until the mixture is evenly incorporated and forms a crumbly batter.
  4. Assemble the Cobbler: Spoon the cake batter evenly over the top of the peach filling, covering it as much as possible.
  5. Add Sugar and Cinnamon: Sprinkle the raw coarse sugar and ground cinnamon evenly over the top of the cake batter to add sweetness and a hint of spice.
  6. Bake: Place the baking dish in the preheated oven and bake for 40 to 45 minutes, or until the top is golden brown and the filling is bubbly.
  7. Cool and Serve: Remove the cobbler from the oven and let it rest for about 10 minutes to set. Serve warm, optionally with a scoop of vanilla bean ice cream for extra indulgence.

Notes

  • For a crispier topping, add an extra tablespoon of melted butter before sprinkling the sugar and cinnamon.
  • If fresh peaches are in season, substitute canned peach pie filling for a fresher flavor; adjust sugar accordingly.
  • Store leftovers covered in the refrigerator for up to 3 days and reheat gently before serving.
  • Vanilla ice cream complements this cobbler beautifully, but whipped cream or yogurt can be a lighter alternative.
