Ingredients

Salad Base

  • 2 cups finely chopped kale

Creamy Dip

  • 8 ounces cream cheese, room temperature
  • 8 ounces sour cream
  • 3 cloves garlic, finely minced
  • 2 teaspoons Worcestershire sauce
  • 1-2 teaspoons fish sauce
  • 2 teaspoons Dijon mustard
  • 2 ounces grated Parmesan cheese, plus more for garnish
  • Kosher salt, to taste
  • Fresh cracked pepper, to taste

Optional Garnish

  • 1/2 cup crushed croutons
  • Crispy homemade crostini for dipping

Instructions

  1. Prepare the Kale: Add chopped kale, lemon juice, olive oil, and a couple large pinches of salt and pepper to a medium bowl. Massage the lemon juice and olive oil into the kale and let it sit and wilt while you prepare the creamy base.
  2. Make the Creamy Dip Base: In a large bowl, combine lemon zest, cream cheese, sour cream, minced garlic, Worcestershire sauce, fish sauce, Dijon mustard, and a few large pinches of salt and pepper. Use an electric mixer to blend everything until smooth and creamy.
  3. Combine the Ingredients: Fold the wilted kale, grated Parmesan cheese, and plenty of fresh cracked black pepper into the creamy mixture. Taste and adjust seasoning with additional salt and pepper as needed.
  4. Garnish and Serve: Transfer the dip to a serving dish and garnish with extra grated Parmesan, crushed croutons, and a few cranks of fresh cracked black pepper. Serve immediately with crispy homemade crostini for dipping.
