This Buttery Caper Sauce is a quick and flavorful accompaniment perfect for fish, shrimp, chicken, or your favorite protein. Combining sautéed onions, Brazilian sofrito, capers, fresh thyme, white wine, and bright lime zest, this sauce adds a vibrant, buttery tang to any dish in just 15 minutes.

Ingredients

Vegetables and Herbs

  • 1/2 cup of onion, diced
  • 4 sprigs of fresh thyme
  • 1 tablespoon of parsley, minced
  • 1 teaspoon of lime zest (from 1 lime)

Sauce Components

  • 2 tablespoons of Brazilian sofrito (or 3 cloves of garlic, minced)
  • 6 tablespoons of unsalted butter
  • 3 tablespoons of capers, roughly minced
  • 1/4 cup of white wine
  • 1 tablespoon of lime juice, freshly squeezed
  • Salt and pepper to taste

Instructions

  1. Melt Butter: Melt 2 tablespoons of the unsalted butter in a small pan over medium heat to prepare the base for sautéing.
  2. Sauté Onions: Add the diced onions to the pan and cook for about 2-3 minutes until they become soft and transparent.
  3. Add Sofrito: Stir in the Brazilian sofrito (or minced garlic) and sauté for 1-2 minutes until fragrant, enhancing the sauce’s depth of flavor.
  4. Deglaze with Wine and Add Thyme: Pour in the white wine along with the fresh thyme sprigs. Cook until most of the wine has evaporated, concentrating the flavors.
  5. Finish Sauce Base: Remove the thyme sprigs and discard them. Add the roughly minced capers, lime juice, and the remaining 4 tablespoons of butter. Stir gently until the butter fully melts into the sauce, creating a smooth texture.
  6. Season to Taste: Taste the sauce and season with salt and pepper according to your preference.
  7. Add Fresh Herbs and Zest: Turn off the heat. Stir in the minced parsley and lime zest to add brightness and freshness.
  8. Serve: Spoon the buttery caper sauce over cooked fish, shrimp, chicken, or any preferred protein to elevate your dish.
