A deliciously creamy and indulgent homemade Butterscotch Banoffee Ice Cream combining the sweet flavors of butterscotch, ripe bananas, and crunchy biscuits, finished with a luscious toffee sauce topping. This easy no-churn recipe uses Angel Delight Butterscotch mix and is perfect for a quick, satisfying dessert.

Ingredients

Main Ingredients

  • 59g Angel Delight Butterscotch powder
  • 2 ripe bananas
  • 1/2 pint (approximately 284ml) milk

For Serving

  • 1 biscuit per serving (hobnobs, digestives, or ginger nuts recommended)
  • Additional banana slices (approximately 1 banana divided for 4 servings)
  • Toffee sauce, to taste

Instructions

  1. Prepare bananas: Crush 2 ripe bananas thoroughly in your Ninja Creami tub until they reach a smooth consistency.
  2. Make butterscotch mixture: In a separate bowl, mix the 59g sachet of Angel Delight Butterscotch powder with 1/2 pint of milk until fully combined with no lumps.
  3. Combine ingredients: Pour the butterscotch milk mixture into the tub containing the crushed bananas. Stir well to combine all ingredients evenly.
  4. Freeze: Place the tub in the freezer and freeze for 24 hours to set the mixture into a firm consistency suitable for creaming.
  5. Cream the ice cream: After freezing, process the mixture using the Ninja Creami ice cream mode to achieve a smooth and creamy texture.
  6. Prepare for serving: For each serving, crush 1 biscuit finely. Slice additional banana thinly for garnish.
  7. Assemble and serve: Scoop the ice cream into bowls or cones, sprinkle with crushed biscuit, top with banana slices, and drizzle generously with toffee sauce before serving.

Notes

  • Use ripe bananas for the best natural sweetness and smooth texture.
  • If you do not have a Ninja Creami, a similar ice cream maker could be used or churn by hand with additional freezing steps, but texture may vary.
  • Choose biscuits with a good crunch and flavor that complement butterscotch and banana, like hobnobs or digestive biscuits.
  • Adjust toffee sauce quantity according to taste preference for added richness.
  • Store leftovers in the freezer and re-spin or soften slightly before serving again for best texture.
