A vibrant and flavorful burst tomato flatbread featuring roasted cherry tomatoes, garlic, wilted spinach, and creamy dairy-free Boursin on a crispy flatbread crust, finished with fresh basil and optional red pepper flakes for a delightful twist.

Ingredients

Tomato Topping

  • 12 ounces cherry tomatoes
  • 3 cloves garlic, peeled
  • 2 tablespoons avocado oil (divided)
  • 2 tablespoons balsamic vinegar
  • Salt & pepper to taste

Spinach

  • 3 handfuls spinach
  • 0.5 tablespoon avocado oil
  • Salt & pepper to taste

Flatbread Base

  • 1 pre-made flatbread (see notes)
  • 6 ounces dairy-free Boursin cheese (see notes)
  • 2 tablespoons fresh basil, chopped, plus more for serving
  • Red pepper flakes (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper to prepare for roasting the tomatoes and garlic.
  2. Roast Tomatoes and Garlic: In the prepared baking dish, add cherry tomatoes, peeled garlic cloves, 2 tablespoons avocado oil, balsamic vinegar, and a pinch of salt and pepper. Toss everything to coat evenly. Roast in the oven for 20-25 minutes until the tomatoes burst and release their juices. Remove from the oven and roughly chop the roasted garlic cloves.
  3. Wilt Spinach: While the tomatoes are roasting, heat the remaining 0.5 tablespoon of avocado oil in a skillet over medium heat. Add the spinach along with a pinch of salt and pepper. Cook, stirring occasionally, until the spinach is wilted and tender. Remove from heat and set aside.
  4. Assemble Flatbread: Place the pre-made flatbread on a baking sheet. Spread the dairy-free Boursin cheese evenly over the surface of the flatbread. Top the cheese layer with the chopped roasted garlic, wilted spinach, chopped fresh basil, and the burst roasted tomatoes. Reserve the tomato juices from the baking dish for serving.
  5. Bake Flatbread: Bake the assembled flatbread in the oven for about 8 minutes, or until the cheese is melted and the flatbread crust is crispy and golden.
  6. Serve: Remove the flatbread from the oven and slice into desired portions. Drizzle the reserved tomato juices over the flatbread, sprinkle with red pepper flakes if desired, and garnish with additional fresh basil. Serve immediately and enjoy!

Notes

  • You can use any store-bought or homemade pre-made flatbread as the base. Choose one that crisps up nicely in the oven.
  • Dairy-free Boursin cheese is recommended for a creamy texture and bold flavor. If unavailable, substitute with a similar creamy spreadable cheese.
  • Reserve the tomato juices after roasting to drizzle over the finished flatbread for extra moisture and flavor.
