Delicious and juicy Buffalo Ranch Chicken Skewers featuring tender chicken coated in a flavorful blend of ranch and buffalo dry rub seasonings, then cooked to perfection with a buttery, chive-infused sauce. Perfect as a hearty appetizer or main dish for game day or casual gatherings.

Ingredients

Chicken and Marinade

  • 2 lbs chicken tenders (breast or thighs, tenders preferred for juiciness)
  • 2 tablespoons olive oil
  • 1 - 8 oz stick salted butter
  • 2 tablespoons fresh chives, minced

Ranch Seasoning

  • 1 tablespoon dried parsley
  • 1 tablespoon dried dill
  • 1 tablespoon garlic powder
  • 2 teaspoons onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Buffalo Dry Rub Seasoning

  • 1 tablespoon cayenne pepper (reduce for less spice)
  • 1 tablespoon chili powder
  • 1 tablespoon paprika
  • 1 tablespoon ground mustard
  • 2 tablespoons brown sugar
  • 1 teaspoon cumin
  • 2 teaspoons garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Prepare Seasonings: In separate bowls, combine the ranch seasoning ingredients and the buffalo dry rub ingredients individually. Mix well to ensure spices are evenly distributed.
  2. Coat Chicken: Rinse and pat dry the chicken tenders. Drizzle them with olive oil and toss to coat evenly. Sprinkle the ranch seasoning over the chicken and rub it in gently, followed by a light coating of the buffalo dry rub for flavor and heat.
  3. Skewer Chicken: Thread the seasoned chicken tenders onto skewers, making sure they are spaced evenly for uniform cooking.
  4. Cook Chicken Skewers: Heat a grill or skillet over medium-high heat. Cook the skewers for about 4-5 minutes on each side or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through and nicely charred in spots.
  5. Prepare Butter Sauce: While the chicken cooks, melt the butter in a small saucepan over low heat. Stir in the minced fresh chives and keep warm.
  6. Serve: Remove the cooked skewers from the heat and brush generously with the melted chive butter sauce. Serve immediately as a flavorful appetizer or main course with your choice of sides.

Notes

  • Adjust the cayenne amount in buffalo dry rub for desired spice level.
  • Using chicken tenders ensures a moist and tender final dish, but breasts or thighs work as well.
  • Soaking wooden skewers in water for 30 minutes prior to grilling prevents them from burning.
  • This recipe is perfect for grilling, but you can also cook the skewers under a broiler or on a stovetop grill pan.
  • Serve with ranch dip or blue cheese dressing for extra flavor.
