These Buffalo Chicken Sliders feature tender shredded chicken coated in spicy buffalo sauce, melted provolone cheese, and a crunchy blue cheese slaw, all nestled between soft brioche slider buns. Perfect for game day, parties, or a flavorful handheld dinner.

Ingredients

Slider Ingredients

  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 8 brioche slider buns, split
  • 8 slices provolone cheese
  • 2 tablespoons unsalted butter
  • 1 clove garlic, minced
  • 2 tablespoons chopped fresh parsley, divided

Blue Cheese Slaw

  • 1 1/2 cups coleslaw mix (shredded cabbage and carrots)
  • 1/4 cup blue cheese dressing
  • 1 tablespoon chopped fresh parsley (reserved from above)

Instructions

  1. Prepare the Chicken: Preheat your oven to 350ºF (175ºC). In a large bowl, toss the shredded cooked chicken with the buffalo sauce until well coated. Set aside to let the flavors meld.
  2. Assemble the Sliders: Arrange the slider buns on a small baking dish or baking sheet. Place a slice of provolone cheese on each bottom bun. Spoon and evenly spread the buffalo chicken mixture over the cheese. Cover with the top halves of the buns.
  3. Prepare Garlic Butter and Bake: In a microwave-safe bowl, melt the butter. Stir in minced garlic and half of the chopped parsley. Brush this garlic butter mixture generously over the top slider buns. Transfer the assembled sliders to the oven and bake for 10–12 minutes, or until the cheese has melted and the buns begin to turn golden brown.
  4. Make the Blue Cheese Slaw: While the sliders bake, combine the coleslaw mix, blue cheese dressing, and remaining parsley in a bowl. Toss well to coat evenly and refrigerate until ready to use.
  5. Add the Slaw and Serve: When the sliders come out of the oven, carefully lift off the top buns. Spoon the prepared blue cheese slaw evenly over the buffalo chicken layers. Replace the top buns, slice the sliders if desired, and serve warm immediately for the best flavor and texture.

Notes

  • Use leftover rotisserie chicken for convenience and added flavor.
  • Adjust the amount of buffalo sauce to suit your preferred level of spiciness.
  • To make ahead, prepare the sliders up to the baking step, cover, and refrigerate; bake when ready to serve.
  • Substitute blue cheese dressing with ranch dressing for a milder taste.
  • For gluten-free, use slider buns made from gluten-free bread.
