These super cheesy Buffalo Chicken Sliders combine tender shredded chicken tossed in spicy buffalo sauce with creamy ranch dressing and melted mozzarella cheese, all nestled in sweet Hawaiian dinner rolls and baked to golden perfection. Perfect for parties or a quick weeknight meal, they offer a balanced blend of spicy, tangy, and savory flavors with melty, gooey cheese and buttery seasoned buns.

Ingredients

Slider Base

  • 1 (12-ounce) package Hawaiian sweet dinner rolls (such as King’s Hawaiian)

Buffalo Chicken Mixture

  • 3 cups shredded chicken breast
  • ¾ cup hot sauce (such as Frank’s RedHot or Frank's Buffalo)
  • ¼ cup ranch dressing (Greek-yogurt based recommended)
  • 1 teaspoon garlic powder

Cheese

  • 2 cups shredded mozzarella (or provolone, or Havarti cheese, divided)

Butter Topping

  • 3 tablespoons unsalted butter (melted)
  • 1 teaspoon Italian seasoning

Instructions

  1. Prepare the Oven: Place a rack in the center of your oven and preheat to 375°F. Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Slice the Rolls: Without disconnecting the buns at their sides, slice the slider buns in half horizontally to create a top and bottom layer. Place the bottom half of the buns in the center of the prepared baking sheet.
  3. Mix the Buffalo Chicken: In a mixing bowl, combine the shredded chicken breast, hot sauce, ranch dressing, and garlic powder until the chicken is evenly coated in the buffalo mixture.
  4. Assemble the Sliders: Scatter a small handful of shredded cheese evenly over the bottom buns. Spread the buffalo chicken mixture evenly on top of the cheese layer. Sprinkle the remaining shredded cheese evenly over the chicken.
  5. Top and Butter the Buns: Place the top half of the buns over the assembled chicken and cheese. In a small bowl, mix the melted butter with Italian seasoning, then brush this flavorful butter liberally over the tops of the buns to ensure a golden, tasty crust.
  6. Bake the Sliders: Place the baking sheet in the preheated oven and bake the sliders for 10 to 12 minutes, or until the cheese is melted and bubbly and the tops of the buns are golden brown.
  7. Serve: Remove the sliders from the oven and transfer to a cutting board. Let them cool for a few minutes to set. Carefully slice the sliders apart with a serrated knife along the previously cut edges and serve warm.

Notes

  • You can substitute shredded chicken with rotisserie chicken for convenience.
  • To adjust spice level, vary the amount of hot sauce or use a milder variety.
  • For a dairy-free option, try vegan cheese and a dairy-free ranch dressing.
  • These sliders can be assembled ahead of time and baked just before serving.
  • Leftovers keep well refrigerated for up to 3 days and can be reheated in the oven or microwave.
