Ingredients

Oreo Crust

  • 22 Oreos, divided

Brownie Layer

  • 1 box brownie mix (for a 9x13 inch pan)

Cheesecake Layer

  • 8 ounces cream cheese, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar
  • 2 tablespoons sour cream

Chocolate Ganache Topping

  • 1/4 cup chocolate chips
  • 1/4 cup heavy whipping cream

Instructions

  1. Prepare Oreo Crust: Preheat your oven to 350°F (175°C). Place about 20 Oreos into a food processor or crush them manually to form fine crumbs. Press these crumbs evenly into the bottom of a greased 9x13 inch baking pan to create the crust layer.
  2. Make Brownie Batter: Prepare the brownie mix according to the package instructions. Once mixed, carefully pour the brownie batter over the Oreo crust, spreading it evenly but gently so you don’t disturb the crust too much.
  3. Prepare Cheesecake Filling: In a medium bowl, beat together the softened cream cheese, egg, vanilla extract, granulated sugar, and sour cream until completely smooth and creamy, ensuring no lumps remain.
  4. Layer Cheesecake Filling: Spoon the cheesecake mixture evenly over the brownie batter in the pan. Use a spatula to spread it gently and evenly across the top.
  5. Bake: Place the pan in the oven and bake at 350°F (175°C) for about 35 to 40 minutes, or until the cheesecake layer is set but still slightly jiggly in the center.
  6. Cool Down: Remove the pan from the oven and let it cool completely at room temperature. Then refrigerate for at least 2 hours to allow the bars to set thoroughly.
  7. Prepare Chocolate Ganache Topping: In a small saucepan, heat the heavy whipping cream over medium heat until it just begins to simmer. Pour the hot cream over the chocolate chips in a heatproof bowl. Let it sit for a minute, then stir until the mixture is smooth and glossy.
  8. Apply Ganache: Pour the warm ganache evenly over the chilled cheesecake layer, spreading gently with a spatula to cover the surface completely.
  9. Chill Again: Place the pan back in the refrigerator for another 30 minutes to allow the ganache to set firmly.
