Ingredients

Broccoli

  • 1 lb broccoli, cut into bite size pieces

Sauce

  • 2 tablespoons water
  • 1 1/2 tablespoons light soy sauce
  • 1/2 teaspoon dark soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch

Stir Fry

  • 1 tablespoon peanut oil
  • 1 teaspoon minced ginger
  • 3 cloves garlic, chopped

Instructions

  1. Blanch the broccoli: Heat 1 inch of water in a large frying pan over medium-high heat until boiling. Add the broccoli, cover the pan, and cook for 2 minutes until the broccoli is al dente. Drain and set aside.
  2. Prepare the sauce: In a small bowl, mix together water, light soy sauce, dark soy sauce, sugar, and cornstarch until cornstarch is fully dissolved.
  3. Cook aromatics: Wipe the pan clean and heat the peanut oil over medium-high heat until shimmering. Add minced ginger and chopped garlic, stirring constantly for about 30 seconds to release their fragrance.
  4. Stir-fry broccoli: Add the blanched broccoli to the pan, stirring and cooking for 1 minute until broccoli is evenly coated with oil and any excess moisture from blanching evaporates.
  5. Add the sauce and finish cooking: Stir the sauce mixture again and pour it into the pan immediately. Stir continuously to combine everything well until the sauce thickens and coats the broccoli nicely.
  6. Serve: Transfer the broccoli with garlic sauce to a plate and serve hot as a flavorful side dish.

Notes

  • To make this dish gluten-free, substitute tamari for both the light and dark soy sauce to avoid gluten.
