  • 1 small shallot, minced (35g)
  • 1 tbsp Dijon mustard (15ml)
  • 4 tbsp red wine vinegar (60ml)
  • 4 tbsp olive oil (60ml)
  • 3 tbsp tahini (44ml)
  • 3/4 tsp salt (4g)
  • 2 tsp ground coriander (4g)
  • 1-2 tbsp water (15-30ml) to thin dressing

Instructions

  1. Cook quinoa: Prepare the quinoa according to package instructions. Once cooked, fluff it gently with a fork and allow it to cool completely to prevent wilting the fresh vegetables in the salad.
