Instructions

  1. Boil Water and Prepare Broccoli: Bring a large pot of salted water to a rolling boil over high heat. Add the broccoli florets and cook for 5 minutes until tender but still bright green.
  2. Sauté Onions: While the water is boiling, heat olive oil in a large pot or Dutch oven over medium-high heat. Add diced onions and cook for 5 to 6 minutes until they become lightly browned and fragrant.

  4. Combine Broccoli with Sauce: Using a slotted spoon or sieve, transfer the cooked broccoli from the boiling water into the pot with onions and spices. Do not drain the pasta water. Scoop 1 cup of the pasta water and add it to the broccoli sauce. Bring the sauce to a gentle simmer, then reduce heat to medium-low to keep warm.
  5. Cook Pasta: Add the fusilli to the boiling water and cook according to the package instructions until al dente.
  6. Simmer Sauce: Let the broccoli sauce simmer gently while the pasta cooks, stirring occasionally to prevent sticking and allow flavors to meld.
