Breakfast Pigs in a Blanket are a delicious and fun twist on a classic breakfast favorite. Made by wrapping fully cooked sausage links in cinnamon roll dough, then baking until golden brown, these treats are perfect for a quick breakfast or brunch. Drizzled with warm cinnamon icing and served with maple syrup for dipping, they combine sweet and savory flavors that everyone will love.

Ingredients

Sausage and Dough

  • 2 (8 count) tubes Pillsbury cinnamon rolls with icing
  • 16 fully cooked sausage links

Additional

  • Maple syrup, for serving (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees F (190 degrees C) and line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and make cleanup easier.
  2. Optional Sausage Browning: If desired, place the fully cooked sausage links in a skillet over medium heat. Cook them until they are nicely browned to enhance flavor. Then set them aside to cool slightly before wrapping.
  3. Prepare Cinnamon Rolls: Separate the cinnamon rolls from each tube and reserve the icing. Flatten each cinnamon roll with your fingers or a rolling pin into an oval shape about 3½ to 4 inches long, creating enough dough to wrap around the sausage.
  4. Wrap Sausages: Place one sausage link in the center of each flattened cinnamon roll dough. Wrap the dough around the sausage, pinching the edges closed so the sausage is completely encased. Place the wrapped sausages seam side down on your prepared baking sheet.
  5. Bake: Bake the pigs in a blanket in the preheated oven for about 15 minutes, or until the dough is cooked through and golden brown on top.
  6. Apply Icing and Serve: Let the baked pigs in a blanket cool for a few minutes. Warm the reserved cinnamon roll icing in the microwave for a few seconds until pourable. Drizzle the icing generously over the baked rolls. Serve warm with maple syrup on the side for dipping if desired.

Notes

  • You can skip browning the sausages if you’re short on time or prefer a softer texture.
  • Use parchment paper or silicone mats to prevent sticking and make cleanup easy.
  • For a spicier version, try using spicy sausages or adding a pinch of cinnamon or cayenne to the dough before wrapping.
  • Serve immediately for the best taste and texture.
  • Leftovers can be reheated in the oven or microwave but are best enjoyed fresh.
