Ingredients

Crust:

  • 1 cup sweetened flaked coconut
  • ½ cup toffee bits

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line a 13×9-inch baking pan with foil, leaving some foil hanging over the edges to use as handles later. Lightly grease the foil with cooking spray to prevent sticking.
  2. Make the crust: In a large bowl, whisk together the flour, brown sugar, and salt. Pour in the melted butter and vanilla extract, then stir with a fork until the mixture is combined and holds together when pressed. Press the dough evenly across the bottom of the prepared pan to form the crust.
  3. Bake the crust: Place the pan in the oven and bake for 15-20 minutes or until the crust turns golden brown. Keep the oven on for the next step.
  4. Prepare the filling: Using the same large bowl, whisk the brown sugar and melted butter until smooth. Add the corn syrup, eggs, bourbon, and salt, whisking until completely combined. Gently fold in the chopped pecans, sweetened flaked coconut, and toffee bits, ensuring they are evenly distributed.
  5. Assemble and bake the bars: Pour the filling evenly over the pre-baked crust and spread it out in the pan. Bake for about 25 minutes, or until the top is set, edges appear browned, and an instant-read thermometer inserted into the center registers 200°F (93°C).
  6. Cool and chill: Remove the bars from the oven and let them cool completely on a wire rack while still in the pan. Once cooled, cover the pan and refrigerate the bars until firm, at least four hours or overnight.
