This refreshing Blueberry Frozen Yogurt recipe combines fresh or frozen blueberries with creamy full-fat yogurt and natural honey for a delightful, homemade frozen treat. Perfect for a healthy dessert or snack, the yogurt is blended with a simmered blueberry mixture infused with lemon zest and juice, then churned to creamy perfection in an ice cream maker.

Ingredients

Blueberry Mixture

  • 1 pint (2 ½ cups) blueberries, fresh or frozen
  • ⅔ cup honey
  • ¼ teaspoon salt
  • 1 small lemon, zested (½ teaspoon) and juiced (2 tablespoons)

Frozen Yogurt Base

  • 2 cups full-fat yogurt, chilled

Instructions

  1. Prepare the Blueberries: Pick through the blueberries carefully, discarding any bad berries, stems, or debris. Combine the blueberries, honey, lemon zest, lemon juice, and salt in a medium saucepan.
  2. Simmer the Mixture: Bring the mixture to a simmer over medium heat. Then reduce the heat to a gentle simmer and cook for 15 minutes, stirring occasionally, to break down the berries and infuse flavors.
  3. Strain for Smooth Texture (Optional): For a smoother frozen yogurt, strain the mixture through a fine mesh colander into a bowl. Use the back of a large spoon to mash the blueberries and extract as much liquid as possible. Discard the pulp.
  4. Chill the Mixture: Refrigerate the blueberry mixture until completely chilled. To speed this up, place it in the freezer and stir every 10 minutes for about 45 minutes until fully cold.
  5. Combine with Yogurt: Mix the chilled blueberry mixture with the chilled full-fat yogurt until well combined.
  6. Churn the Frozen Yogurt: Freeze the mixture in your ice cream maker according to the manufacturer's instructions. Serve immediately for a soft-serve texture.
  7. Freeze for Firmer Consistency: To achieve scoopable frozen yogurt, transfer it to a freezer-safe container and freeze for several hours before serving.

Notes

  • Using full-fat yogurt gives the creamiest texture.
  • Honey naturally sweetens the frozen yogurt, but you can adjust sweetness to taste.
  • The optional straining step results in a smoother texture, but if you prefer more fruit bits, you can skip it.
  • If you don't have an ice cream maker, you can freeze the mixture in a shallow container and stir every 30 minutes until firm to avoid ice crystals.
  • This recipe works well with both fresh and frozen blueberries.
