Blueberry Compote

  • ½ cup blueberries
  • 4 tablespoons water
  • Squeeze of lemon juice
  • 1 teaspoon coconut sugar (optional)

Instructions

  1. Prepare the Blueberry Compote: In a small saucepan, combine ½ cup blueberries, 4 tablespoons water, a squeeze of lemon juice, and 1 teaspoon coconut sugar if using. Heat over medium heat, stirring occasionally, until the blueberries break down and the mixture thickens slightly, about 5-7 minutes. Remove from heat and set aside to cool.
  2. Make the Waffle Batter: In a blender, add the almond flour, tapioca flour, coconut flour, eggs, lemon olive oil, almond milk, baking powder, sea salt, vanilla extract, and agave or maple syrup. Blend until the mixture is smooth and well combined, about 30 seconds. Gently fold in the ½ cup blueberries by hand to avoid crushing them.
  3. Preheat the Waffle Iron: Heat your waffle iron according to the manufacturer's instructions and lightly grease it if needed to prevent sticking.
