This Blackened Miso Salmon with Creamy Coconut Cucumber Salad is a flavorful and healthy dish combining tender, marinated salmon with a vibrant, refreshing cucumber salad dressed in a creamy coconut-lime dressing. Perfect for a light yet satisfying meal, it features an umami-rich marinade and a slightly charred, blackened finish under the broiler.

Ingredients

Salmon and Marinade

  • 1 lb skin-on salmon (cut into 4 oz filets)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp white miso paste
  • 1 tbsp olive oil
  • 1 garlic clove (minced)
  • Juice and zest from 1 lime

Creamy Coconut Cucumber Salad

  • 1 large English cucumber or 4 mini cucumbers (sliced)
  • 4 green onions (sliced)
  • 2 tbsp cilantro (chopped)
  • 1/3 cup full fat (unsweetened) coconut milk
  • 1/2 tsp honey
  • Juice and zest from 1 lime
  • Kosher salt to taste

Serving Suggestion

  • Cooked black or brown rice (for serving)

Instructions

  1. Prepare the marinade and marinate salmon: In a small bowl, whisk together the soy sauce, honey, miso, olive oil, minced garlic, lime juice, and lime zest. Pour about 3/4 of this marinade into a shallow dish and place the salmon filets skin side up in it. Let the salmon marinate for 15-20 minutes to absorb the flavors.
  2. Make the creamy coconut cucumber salad: While the salmon marinates, combine the sliced cucumber, green onions, chopped cilantro, coconut milk, honey, lime juice, and lime zest in a large bowl. Mix well and season with kosher salt to taste. Adjust flavors as needed.
  3. Preheat the broiler: Place an oven rack about 6 inches below the heating element and preheat your broiler to high.
  4. Cook the salmon under the broiler: Line a broil pan or baking sheet with foil and place the salmon filets skin side down on it. Broil the salmon for 8-10 minutes until the fish is no longer opaque and the top is slightly blackened and caramelized.
  5. Finish and serve: Remove the salmon from the broiler and brush the remaining 1/4 of the marinade over the filets to add extra flavor. Serve immediately with the creamy coconut cucumber salad and a side of warm cooked black or brown rice if desired.

Notes

  • If you prefer, you can cook the salmon in an air fryer: cook at 400°F for 8-10 minutes until the salmon is cooked through and slightly blackened.
  • Be careful not to overcook the salmon; it should remain moist and tender inside.
  • Use low-sodium soy sauce to keep sodium levels moderate.
  • The creamy coconut cucumber salad can be adjusted for sweetness and acidity by varying the honey and lime juice amounts.
