Ingredients

For the Chocolate Crust:

  • 1 ½ cups chocolate cookie crumbs (such as Oreo, without filling)
  • ¼ cup unsalted butter, melted
  • 2 tbsp granulated sugar

For the Cheesecake Layer:

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup sour cream (for a creamy texture)
  • Pinch of salt

For the Topping:

  • 1 can (21 oz) cherry pie filling
  • Optional: dark chocolate shavings or curls for garnish
  • Optional: whipped cream for serving

Instructions

  1. Prepare the crust: In a mixing bowl, combine the chocolate cookie crumbs, melted butter, and granulated sugar. Stir until the crumbs are evenly coated and can hold together when pressed.
  2. Form the crust base: Press the crumb mixture firmly into the bottom of a greased 9x9 inch baking pan to form an even layer. Set aside while preparing the cheesecake layer.
  3. Make the cheesecake batter: In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy using a hand mixer or stand mixer. Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract, sour cream, and a pinch of salt until fully incorporated.
  4. Assemble and bake: Pour the cheesecake mixture over the prepared crust and smooth the top with a spatula. Bake in a preheated oven at 325°F (163°C) for approximately 35-40 minutes, or until the edges are set and the center is slightly jiggly but not liquid.
  5. Cool and top: Remove the cheesecake bars from the oven and let them cool completely to room temperature. Once cooled, spread the cherry pie filling evenly over the top of the cheesecake layer.
  6. Chill: Refrigerate the bars for at least 3 hours to allow them to set and flavors to meld.
  7. Serve: Optionally, garnish with dark chocolate shavings or curls and serve with whipped cream for an extra indulgent treat. Slice into squares and enjoy!

Notes

  • Be sure the cream cheese is softened to room temperature to avoid lumps.
  • Do not overbake; the cheesecake should be set but a little jiggly in the center when done.
  • If using Oreos, remove the cream filling before crushing to keep the crust texture ideal.
  • Chilling the bars adequately improves slicing and flavor development.
  • For a gluten-free version, use gluten-free chocolate cookie crumbs.
