Ingredients

Dough:

  • 3 cups organic all-purpose flour
  • 2 ½ cups artisan bread flour
  • ½ cup organic brown sugar + 1 Tbsp
  • 1 packet rapid rise yeast (2 ¼ teaspoons)
  • ¼ cup warm water
  • 1 teaspoon Dessert Lover Blend (store-bought or homemade)
  • 2 large eggs, room temperature
  • 1 ¼ cups almond milk, room temperature (or dairy milk)
  • 6 tablespoons salted butter, melted and warm
  • 2 teaspoons vanilla extract

Biscoff Cookie Butter Filling:

  • 1 cup Biscoff cookie butter
  • ½ cup organic brown sugar
  • 2 teaspoons Dessert Lover Blend
  • ⅓ cup organic heavy cream (for topping)

Biscoff Cookie Butter Frosting/Glaze:

  • ½ cup salted butter, softened at room temperature
  • ½ cup Biscoff cookie butter
  • 4-5 cups organic powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 4-6 tablespoons almond milk (or preferred plant-based or dairy milk)

Garnish:

  • Crushed Biscoff cookies

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine the all-purpose flour, artisan bread flour, brown sugar, rapid rise yeast, and Dessert Lover Blend. In a separate bowl, whisk together warm water, almond milk, eggs, melted butter, and vanilla extract. Gradually add the wet ingredients to the dry, mixing until a soft dough forms. Knead the dough for about 8-10 minutes until smooth and elastic.
  2. First Rise: Place the dough in a lightly greased bowl, cover with a clean towel or plastic wrap, and let it rise in a warm spot until doubled in size, about 1 to 1.5 hours.
  3. Prepare the Filling: In a small bowl, mix together Biscoff cookie butter, brown sugar, and Dessert Lover Blend until well combined. Set aside.
  4. Shape the Rolls: Once the dough has risen, punch it down and roll it out onto a floured surface into a large rectangle, approximately 16x12 inches. Spread the Biscoff filling evenly over the dough, leaving a small border around the edges.
  5. Roll and Cut: Carefully roll the dough lengthwise into a tight log. Using a sharp knife, cut the log into 12 equal slices.
  6. Second Rise: Arrange the slices in a greased baking dish or sheet, ensuring some space between each. Cover and let rise again for 30-45 minutes until puffy.
  7. Bake the Rolls: Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes or until golden brown and cooked through.
  8. Prepare the Frosting/Glaze: While the rolls bake, beat together softened butter and Biscoff cookie butter until creamy. Gradually add powdered sugar, alternating with the almond milk, until the icing reaches a spreadable consistency. Mix in vanilla extract.
  9. Top the Rolls: When the rolls come out of the oven, brush the tops with the organic heavy cream to add richness and sheen. Allow them to cool slightly then generously spread the Biscoff frosting over the warm rolls.
  10. Garnish and Serve: Sprinkle crushed Biscoff cookies over the frosted rolls for added texture and flavor. Serve warm and enjoy!

Notes

  • For an authentic flavor, the Dessert Lover Blend is essential; if unavailable, a homemade blend of cinnamon, nutmeg, and clove can be used.
  • Using a combination of all-purpose and artisan bread flour creates soft yet sturdy rolls with great texture.
  • Ensure butter is melted but not hot to avoid killing the yeast during dough mixing.
  • Room temperature eggs and milk help activate the yeast more effectively.
  • Extra powdered sugar in the frosting can be adjusted to achieve your desired sweetness and thickness.
  • Store any leftovers covered at room temperature for up to 2 days or refrigerate and warm before serving.
