  • 2 cups grated cucumber (from about 1 medium 10-ounce cucumber, no need to peel or seed)
  • 1 ½ cups plain Greek yogurt
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons chopped fresh mint and/or dill
  • 1 tablespoon lemon juice
  • 1 medium clove garlic, pressed or minced
  • ½ teaspoon fine sea salt

Instructions

  1. Remove excess moisture: Working with one big handful at a time, lightly squeeze the grated cucumber between your palms over the sink to remove excess moisture. Transfer the squeezed cucumber to a serving bowl and repeat until all cucumber is squeezed.
  2. Combine ingredients: Add the Greek yogurt, extra-virgin olive oil, chopped fresh herbs (mint and/or dill), lemon juice, minced garlic, and fine sea salt to the bowl with the cucumber. Stir thoroughly to blend all ingredients well.
  3. Let flavors meld: Allow the mixture to rest for 5 minutes so the flavors can blend and develop fully. After resting, taste the tzatziki and adjust by adding more fresh herbs, lemon juice, or salt as preferred.
  4. Serve or store: Serve the tzatziki immediately as a fresh dip or condiment, or refrigerate if preferred. Leftover tzatziki will keep well chilled for up to 4 days.

  • There is no need to peel or seed the cucumber, as the moisture is removed by squeezing.
  • Using full-fat or Greek-style yogurt works best for creaminess and texture.
