Ingredients

Cookie Dough

  • 1/2 cup softened, unsalted butter (114g)
  • 1 cup sugar (200g)
  • 1 tsp baking powder
  • 1/8 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs
  • 2 cups flour (260g)
  • 2 tbsp matcha powder

For Rolling

  • 1/4 cup granulated sugar (50g)
  • 1/2 cup powdered sugar (50g)

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to preheat while you prepare the dough.
  2. Mix dry ingredients: In a bowl, whisk together the baking powder, baking soda, salt, flour, and matcha powder until evenly combined to ensure the tea flavor and leavening agents are well distributed.
  3. Cream butter and sugar: Using a mixer, cream the softened butter and sugar until the mixture is light and fluffy, which helps to create a tender cookie texture.
  4. Add eggs: Beat the eggs into the butter-sugar mixture one at a time, ensuring each is fully incorporated to create a smooth batter.
  5. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture; mix until just combined to prevent overworking the dough and keep the cookies tender.
  6. Prepare rolling sugars: Place granulated sugar in one bowl and powdered sugar in another to prepare for rolling the cookie dough balls.
  7. Shape and roll cookies: Scoop tablespoon-sized portions of dough and roll each into the granulated sugar first to coat, then roll again in powdered sugar for the signature crinkle look.
  8. Arrange on baking sheet: Place the sugar-coated dough balls spaced about 2 inches apart on a parchment-lined baking sheet to allow for spreading.
  9. Bake cookies: Bake in the preheated oven for 10-12 minutes or until the edges are set but the centers remain soft, ensuring chewy cookie texture.
  10. Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Use high-quality ceremonial grade matcha for the best flavor and vibrant color.
  • Do not overmix the dough as it can make the cookies tough.
  • The cookies spread slightly, so be sure to space them well on the baking sheet.
  • These cookies do not need chilling and can be baked immediately after mixing.
