Ingredients

Instructions

  1. Roast the Berries: Preheat your oven to 350°F (175°C). Line a rimmed baking sheet with parchment paper. In a medium bowl, gently toss the berries with sugar, a dash of salt, and 2 tablespoons of honey. Spread the berries evenly on the prepared baking sheet in a single layer. Roast for 30 minutes, stirring halfway through, until the berry juices thicken but do not burn. Keep an eye on the edges to prevent scorching.
  2. Prepare Yogurt Base: While the berries roast, blend together the Greek yogurt and lemon juice in a medium bowl. Stir in the remaining honey to taste until the sweetness balances the tartness of the yogurt; adjust with more lemon juice if desired for extra tang.
  3. Combine Berries and Yogurt: Let the roasted berries cool for at least 10 minutes. Then transfer the berries along with their juices into the bowl of yogurt. Gently fold the mixture together using a large spoon to create a marbled effect—avoid mixing thoroughly to maintain visual texture.
  4. Freeze the Popsicles: Spoon the blended mixture into popsicle molds and insert sticks. Freeze them for a minimum of 4 hours or until fully set.
