A refreshing and vibrant Berry Caprese Salad combining sweet blackberries, strawberries, and blueberries with fresh arugula, basil, and mint. Tossed with a light champagne vinaigrette and finished with creamy ciliegine mozzarella and a drizzle of balsamic glaze, this salad is perfect for a light lunch or an elegant starter.

Ingredients

For the Vinaigrette:

  • 2 tablespoons champagne vinegar
  • 1 to 2 pinches kosher salt
  • Freshly ground black pepper, to taste
  • 2 tablespoons olive oil

For the Salad:

  • 10 ounces arugula or baby arugula
  • 2 to 4 tablespoons fresh basil leaves, torn (more or less to taste), plus extra for serving
  • 2 to 4 tablespoons fresh mint leaves, torn (more or less to taste), plus extra for serving
  • 12 ounces blackberries, rinsed and patted dry
  • 12 ounces strawberries, trimmed, rinsed and patted dry
  • 6 ounces blueberries, rinsed and patted dry
  • 8 ounces ciliegine mozzarella, cut in half
  • 2 tablespoons balsamic glaze, more or less to taste

Instructions

  1. Prepare the Vinaigrette: In a small bowl, whisk together the champagne vinegar, kosher salt, and freshly ground black pepper. Slowly drizzle in the olive oil while whisking continuously until the vinaigrette is emulsified and well combined.
  2. Assemble the Salad Base: In a large salad bowl, combine the arugula, torn basil leaves, and torn mint leaves. Toss gently to mix the greens and herbs evenly.
  3. Add the Berries: Gently fold in the blackberries, strawberries, and blueberries into the greens, being careful not to crush the delicate berries.
  4. Incorporate the Cheese: Add the halved ciliegine mozzarella balls to the salad and gently toss to distribute evenly among the berries and greens.
  5. Toss with Vinaigrette: Pour the prepared champagne vinaigrette over the salad and toss gently to coat all the ingredients without damaging the berries or greens.
  6. Finish and Serve: Drizzle the balsamic glaze over the top of the salad to add a sweet tangy flavor. Garnish with additional torn basil and mint leaves for a fresh presentation. Serve immediately to enjoy the freshness and vibrant flavors.

Notes

  • Use fresh, ripe berries for the best flavor and texture.
  • The balsamic glaze can be found at most grocery stores or made at home by reducing balsamic vinegar until thickened.
  • Adjust the amount of herbs according to your preference for a more or less intense herbal flavor.
  • This salad is best served fresh to maintain the freshness of the berries and greens.
  • For a dairy-free version, omit the mozzarella or substitute with a plant-based cheese alternative.
