Cauliflower Mash

  • 2 12 oz bags cauliflower rice or 1.5 heads cauliflower, chopped into florets
  • 1 tbsp ghee or dairy-free butter
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp fresh or dried chives
  • 2 tbsp coconut milk
  • 2 tbsp dairy-free sour cream or regular sour cream
  • Salt and pepper to taste

Instructions

  1. Season and Brown Beef: Season the beef tips generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the beef tips and sear on all sides until well browned, developing a deep crust for extra flavor.
  2. Sauté Onion and Garlic: Push the beef to one side of the skillet. On the other side, add diced onion and minced garlic. Sauté for 30-40 seconds until the onions are translucent and the garlic releases its aroma, making the base of your gravy flavorful.
  3. Make the Gravy: Stir in ghee and beef broth, then slowly add the tapioca or cornstarch slurry while stirring constantly to avoid lumps. If using xanthan gum for Keto, whisk it directly into the broth until thickened. Optionally add coconut aminos or Worcestershire sauce for an enhanced umami flavor.
  4. Simmer: Bring the mixture to a simmer and then reduce heat to low. Allow the beef to gently simmer uncovered for about 30 minutes or until tender and the gravy has thickened to your preference. Adjust seasoning with salt and pepper as needed.
  5. Prepare Cauliflower: If using frozen cauliflower rice, cook according to package instructions and drain excess water. For fresh cauliflower florets, steam in a basket over boiling water until fork-tender, approximately 10-15 minutes. Drain well and pat dry to prevent watery mash.
  6. Make Cauliflower Mash: Transfer the cooked cauliflower to a food processor. Add garlic powder, onion powder, chives, ghee, coconut milk, dairy-free sour cream, and salt and pepper. Blend until smooth and creamy. Adjust consistency by adding extra coconut milk one tablespoon at a time if needed. Garnish with extra fresh chives.

  8. Crockpot Option - Brown Beef: Brown the beef tips in a skillet with olive oil over medium-high heat before transferring to the crockpot.
  9. Crockpot Option - Combine Ingredients: Place browned beef, sautéed onions, garlic, beef broth (plus an extra ½ cup), ghee, salt, and pepper in the crockpot. Do not add the tapioca slurry yet.
