Ingredients

BBQ Jackfruit

  • 1/4 cup olive oil
  • 14-ounce can young jackfruit in brine, drained and rinsed
  • 1/2 cup canned chickpeas, drained and rinsed
  • 2 cloves garlic
  • 1 tablespoon brown sugar
  • Several good shakes of paprika, chili powder, and onion powder
  • A pinch of salt
  • 1/4 cup barbecue sauce

Slaw

  • Pre-made slaw bag mix (preferred) OR
  • Thinly sliced cabbage
  • Mayo
  • Lemon juice or vinegar
  • Sugar
  • Salt

The Rest

  • Toasted buns (brioche buns recommended)
  • Additional toppings such as avocado, pepperoncini, pickles, hot sauce, etc.

Instructions

  1. Prepare the jackfruit and chickpeas: Drain and rinse the young jackfruit and canned chickpeas thoroughly. Shred the jackfruit with your hands or a fork to create a pulled texture.
  2. Cook the jackfruit mixture: Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add the shredded jackfruit and chickpeas to the skillet, stirring to combine.
  3. Season the filling: Sprinkle in the brown sugar, paprika, chili powder, onion powder, and a pinch of salt. Stir well to evenly coat the jackfruit and chickpeas with the spices.
  4. Add barbecue sauce: Pour in the barbecue sauce and mix thoroughly. Cook the mixture for about 10-15 minutes, stirring occasionally, until heated through and slightly caramelized.
  5. Prepare the slaw: If using a pre-made slaw mix, toss it with mayo, lemon juice or vinegar, sugar, and salt to taste. If making from scratch, combine thinly sliced cabbage with mayo, lemon juice or vinegar, sugar, and salt, mixing well to combine. Adjust the flavor as desired.
  6. Toast the buns: Lightly toast the buns on a skillet or oven until golden and warm.
  7. Assemble the sandwiches: Place a generous scoop of the BBQ jackfruit filling on the bottom half of each bun. Add a helping of slaw on top, then finish with any optional toppings like avocado slices, pepperoncini, pickles, or hot sauce. Top with the bun lid and serve immediately.
