This Basic Tofu Scramble is a quick, flavorful vegan alternative to traditional scrambled eggs, combining firm and silken tofu with savory spices and nutritional yeast for a deliciously satisfying plant-based breakfast.

Ingredients

Main Ingredients

  • 30 g (2 Tablespoons) vegan butter/spread
  • 280-300 g (10 oz) extra firm or firm tofu
  • 349 g (12 oz) firm silken tofu

Seasonings

  • 1 teaspoon garlic powder/granules
  • 1 teaspoon onion powder/granules
  • 2 Tablespoons nutritional yeast
  • - ¼ teaspoon turmeric
  • ½ teaspoon salt
  • a good grinding black pepper
  • small handful fresh flat leafed parsley, finely chopped
  • a splash unsweetened vegan milk or cream as needed

Instructions

  1. Heat and crumble firm tofu: Melt the vegan butter in a large non-stick pan over medium heat. Once melted, crumble the firm tofu into the pan using your hands. Cook for one to two minutes while stirring gently to allow the tofu to warm through and start to brown slightly.
  2. Add and break down silken tofu: Add the firm silken tofu to the pan. Using the back of a wooden spoon, gently break the silken tofu into smaller pieces, combining it with the crumbled firm tofu for a soft, scramble-like texture.
  3. Add seasonings and cook: Sprinkle in the garlic powder, onion powder, nutritional yeast, turmeric, salt, and freshly ground black pepper. Continue cooking for another one to two minutes, stirring constantly to evenly distribute the spices and heat through the mixture.
  4. Add parsley and adjust consistency: Stir in the finely chopped fresh parsley, then add a splash of unsweetened vegan milk or cream if the scramble seems too dry. Cook for an additional minute, then taste and adjust seasoning as needed before serving.

Notes

  • Use firm tofu for a chunkier texture and silken tofu to add creaminess.
  • Adjust turmeric quantity to control the yellow color without overpowering the flavor.
  • For extra flavor, add a pinch of smoked paprika or chili flakes if desired.
