Ingredients

Banana Layer

  • 2 bananas (ripe, sliced)
  • caramel sauce (good quality or dulce de leche, amount as desired)

Vanilla Pastry Cream

  • 2/3 cup sugar (can be reduced to 1/2 cup for less sweetness)
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 3 cups whole milk
  • 2 eggs
  • 2 tablespoons butter
  • 1 tablespoon vanilla extract (or 2 teaspoons vanilla extract plus 1 teaspoon vanilla bean paste)

Fresh Whipped Cream

  • 3/4 cup heavy whipping cream
  • 1 tablespoon powdered sugar

Graham Cracker Crumble

  • 1 1/2 cups graham cracker crumbs (about 10 full-sized crackers)
  • 1/3 cup butter, melted
  • 1 tablespoon sugar

Instructions

  1. Prepare the Graham Cracker Crumble: In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix well until the crumbs are evenly coated. Set aside to use as a crunchy base and topping.
  2. Make the Vanilla Pastry Cream: In a medium saucepan, whisk together sugar, cornstarch, and salt. In a separate bowl, beat the eggs. Gradually whisk in the whole milk to the dry ingredients, then add the eggs. Cook over medium heat, stirring constantly until the mixture thickens and comes to a boil. Remove from heat and stir in butter and vanilla extract or vanilla bean paste. Transfer to a bowl, cover with plastic wrap touching the surface to prevent a skin forming, and chill until fully cooled.
  3. Whip the Cream: In a chilled bowl, whisk the heavy whipping cream with the powdered sugar until soft peaks form. Keep refrigerated until assembly.
  4. Slice the Bananas: Peel the bananas and slice them into thin rounds, ready for layering.
  5. Assemble the Dessert: In serving glasses or bowls, start by adding a layer of graham cracker crumble at the bottom. Top with a layer of vanilla pastry cream, followed by banana slices, then drizzle with caramel sauce. Repeat layers if desired, finishing with a layer of whipped cream and a final sprinkle of graham cracker crumble and a drizzle of caramel sauce.
  6. Chill and Serve: Refrigerate the assembled desserts for at least 1 hour before serving to allow flavors to meld and layers to set. Serve chilled and enjoy.

Notes

  • You can reduce sugar in the pastry cream to make the dessert less sweet.
  • Use ripe bananas for the best flavor and texture.
  • Ensure the pastry cream is fully chilled before assembly to avoid melting the whipped cream.
  • The graham cracker crumble can be toasted in the oven for extra crunch if desired.
  • For a vegetarian diet, confirm that the caramel sauce and whipped cream do not contain gelatin or animal-derived ingredients.
