A decadent Banana Bread Sundae featuring pan-fried banana bread slices topped with vanilla ice cream, caramel sauce, toasted pecans, and fresh banana slices. This comforting dessert combines warm, crispy banana bread with creamy ice cream and rich toppings for the perfect indulgent treat.

Ingredients

Banana Bread and Butter

  • 5 (3/4-inch slices) banana bread (day or two old)
  • 3 Tbsp unsalted butter, cut into pieces, divided

Toppings

  • 5 scoops vanilla bean ice cream (or coconut ice cream)
  • 1/2 cup caramel sauce (homemade or store-bought)
  • 1/2 cup chopped toasted pecans
  • 3 medium bananas, sliced

Instructions

  1. Heat Butter and Fry Banana Bread: Melt 2 tablespoons of unsalted butter in a 12-inch non-stick skillet over medium heat. Add the banana bread slices and fry them until the bottom side turns golden brown and toasted, about 1 to 2 minutes.
  2. Cook Other Side: Scatter the remaining 1 tablespoon of butter, cut into small pieces, around the bread slices in the skillet. Flip the banana bread slices and cook until the second side is also golden brown and toasted.
  3. Prepare Bowls: Transfer the warm, crispy banana bread slices to shallow serving bowls. Arrange the sliced bananas on the side of each serving.
  4. Add Toppings and Serve: Top each piece of warm pan-fried banana bread with one scoop of vanilla bean ice cream. Drizzle generously with caramel sauce and sprinkle with chopped toasted pecans. Serve immediately to enjoy the contrast of warm bread and cold ice cream.

Notes

  • Use banana bread that is a day or two old for the best texture when frying.
  • If you prefer a dairy-free option, substitute coconut ice cream and use vegan butter.
  • For a crunchy texture, toast the pecans lightly before chopping.
  • Caramel sauce can be homemade or store-bought depending on preference and time.
  • Serve immediately to prevent the ice cream from melting too much.
