Ingredients

Instructions

  1. Prepare the Banana Mixture: In a small bowl, mash the banana until mostly smooth, leaving a few soft chunks for texture. Stir in the milk, maple syrup, vanilla extract, cinnamon, and salt until well combined.
  2. Add Chia Seeds: Mix in the chia seeds thoroughly for about 30 seconds to prevent clumping.
  3. Let Rest and Stir: Allow the mixture to sit for 5 minutes, then stir once again to evenly distribute the chia seeds.
  4. Refrigerate: Pour the pudding mixture into a jar or container, leaving a little space at the top. Cover and refrigerate overnight or for at least 8 hours until the pudding is thickened and scoopable.
  5. Make the Crumble: In a small pan over medium heat, combine rolled oats, maple syrup, melted coconut oil, cinnamon, and salt. Cook for 5 minutes, stirring frequently until the mixture is lightly golden and fragrant. Remove from heat and let cool.
