Baked Feta Eggs with tomatoes, bell peppers, spinach, and aromatic herbs make a savory and wholesome breakfast or brunch dish. Rich feta cheese pairs perfectly with fresh vegetables and baked eggs for a delightful and easy-to-make meal.

Ingredients

Vegetables

  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • ½ small red onion, diced
  • 3 cloves garlic, minced
  • 1 cup chopped baby spinach

Dairy

  • 8 ounces feta cheese
  • 4 large eggs

Oils & Seasonings

  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • ½ teaspoon dried thyme
  • ½ teaspoon ground black pepper
  • ½ teaspoon red pepper flakes

Optional Toppings

  • Chopped fresh basil or fresh chives

Instructions

  1. Preheat the oven. Set your oven to 400°F (200°C) to prepare for baking the ingredients.
  2. Assemble ingredients in dishes. If using ramekins or individual oven-safe dishes, divide the tomatoes, bell pepper, red onion, garlic, and feta cheese evenly between four dishes. Drizzle one tablespoon of olive oil over each. If using a single large baking dish, combine the tomatoes, bell pepper, red onion, and garlic, place the feta cheese in the center, and drizzle olive oil over everything.
  3. Prepare the spice mix. In a small bowl, mix dried oregano, sea salt, dried thyme, ground black pepper, and red pepper flakes until well combined.
  4. Season the dishes. Sprinkle the spice mixture evenly over the feta and vegetables in all dishes.
  5. Bake the vegetables and cheese. Place ramekins on a baking sheet or place the large baking dish directly into the oven. Bake for 25 minutes until the vegetables soften and the feta starts to melt.
  6. Stir in spinach. Remove from the oven and gently stir to combine the feta with the vegetables evenly. Add the chopped baby spinach, stirring to incorporate it thoroughly.
  7. Make wells and add eggs. Create a well in the center of each dish (or four wells if using one dish). Carefully crack one egg into each well.
  8. Bake eggs. Return the dishes to the oven and bake for an additional 10 minutes, or until eggs are cooked to your preference.
  9. Add final toppings and serve. Remove from oven and sprinkle with optional fresh basil or chives. Serve immediately with crusty baguette, toast, or pita bread for dipping.

Notes

  • You can use either individual ramekins for perfect portions or a single large baking dish for family-style serving.
  • Adjust the red pepper flakes to control the spice level according to your preference.
  • Fresh herbs such as basil or chives add a wonderful fresh finish but can be omitted.
  • To make this recipe gluten-free, serve with gluten-free bread or skip the bread altogether.
  • Leftovers can be refrigerated and gently reheated but are best enjoyed fresh.
