Ingredients
Cheese
7 ounces feta cheese (200 grams), patted dry and cut into 12 cubes
Pastry & Toppings
Phyllo pastry sheets, cut into 4-6 pieces each (minimum 10 inches/25 cm per piece)
Extra virgin olive oil, for brushing
Honey, to drizzle over each baked bite, to taste
Sesame seeds, to sprinkle over each bite
Instructions
Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot and ready for baking the feta bites.
Prepare Feta: Pat the feta cheese dry using paper kitchen towels, then cut into 12 evenly sized cubes for uniform bites.
Cut Phyllo Sheets: Lay a sheet of phyllo pastry on a flat surface and cut into 4-6 pieces, each at least 10 inches long and wide enough to fully wrap a feta cube.
Wrap Cheese: Take one phyllo piece and brush it entirely with olive oil. Place a feta cube near one short edge. Fold one side of the phyllo over the cheese, brush with oil, then fold the other side over to overlap. Brush with oil again and roll the remainder of the phyllo around the cheese cube, forming a neat parcel.
Secure & Prepare for Baking: Secure each wrapped feta with a toothpick and brush the top lightly with olive oil. Place the wrapped bites onto a baking tray lined with baking paper.
Bake: Bake the feta bites in the oven’s center rack for 10-15 minutes until the phyllo is crisp and golden.
Finish & Serve: Remove from oven, transfer to a serving plate, generously drizzle with honey, and sprinkle sesame seeds over each bite for a sweet and nutty finish.
Enjoy: Serve warm as a delightful appetizer or snack and enjoy the contrast of crispy pastry and creamy feta with sweet honey and sesame accents.
Notes
Patting the feta dry is important to prevent the pastry from becoming soggy during baking.
Be gentle with the phyllo sheets as they are very delicate and tear easily.
You can adjust the amount of honey depending on your preferred balance of savory and sweet.
Sesame seeds add a nice crunch and subtle nutty flavor—feel free to toast them slightly beforehand for extra aroma.
Use several sheets of phyllo as needed to wrap all 12 feta cubes; each piece should be large enough to enclose the cheese completely.
