This simple yet elegant Baked Brie with Apricot Jam is a perfect appetizer combining creamy melted brie with a sweet and nutty apricot topping. Ready in just 25 minutes, it makes an impressive treat for gatherings or a cozy night in, served alongside crunchy crackers.

Ingredients

Apricot Mixture

  • 1/2 cup dried apricots (roughly chopped)
  • 1/4 cup sliced almonds (roughly chopped)
  • 1/4 cup apricot jam
  • 1 sprig fresh rosemary (finely chopped)
  • 1/8 teaspoon Morton kosher salt

Main Ingredient

  • 8 ounce wheel of brie
  • crackers (for serving)

Instructions

  1. Preheat Oven: Heat oven to 350°F (175°C) to prepare for baking the brie.
  2. Prepare Apricot Topping: In a mixing bowl, combine dried apricots, sliced almonds, apricot jam, finely chopped rosemary, and kosher salt. Stir well until evenly mixed to create a flavorful topping.
  3. Assemble Brie: Place the wheel of brie on a parchment-lined baking sheet. Generously spoon the apricot mixture over the top of the brie, evenly covering the surface.
  4. Bake the Brie: Bake the brie for 10-12 minutes, until the outside of the cheese is warm to the touch and the inside is melted and gooey.
  5. Rest and Serve: Remove from the oven and allow the cheese to rest for 5 minutes to slightly firm up. Serve warm alongside crackers for dipping and spreading.

Notes

  • Use a parchment-lined baking sheet to prevent sticking and ease cleanup.
  • Ensure the brie is at room temperature before baking for more even melting.
  • Fresh rosemary adds a fragrant herbal note, but can be omitted if unavailable.
  • Serve immediately after resting to enjoy the optimal gooey texture.
  • Try substituting apricot jam with other fruit preserves like fig or raspberry for different flavor profiles.
