This Avocado Toast with Whipped Goat Cheese is a delightful and elegant twist on the classic breakfast favorite. It combines creamy whipped goat cheese and fresh mashed avocado with diced red onions, served on toasted rustic French sourdough bread. Garnished optionally with edible flowers, poppy seeds, and sesame seeds, this recipe offers a fresh, creamy, and crunchy bite perfect for brunch or a light meal.

Ingredients

Cheese Spread

  • 8 oz. whipped cream cheese
  • 4 oz. goat cheese

Avocado Topping

  • 3 large avocados
  • 1 small red onion, diced
  • Salt & pepper, to taste

Toast & Garnishes

  • 1 French sourdough loaf (or any rustic bread), enough for 10 1-inch slices
  • Edible flowers (optional)
  • Poppy seeds (optional, just a sprinkle)
  • Sesame seeds (optional, just a sprinkle)

Instructions

  1. Prepare the cheese spread: In a mixing bowl, thoroughly stir together 8 oz. of whipped cream cheese and 4 oz. of goat cheese until smooth and well combined. Set this mixture aside for spreading later.
  2. Prepare the avocado topping: Peel and pit 3 large avocados and mash them using a potato masher in a mixing bowl. Add the diced small red onion and season with a liberal sprinkle of salt and pepper. Stir everything together until evenly mixed. Transfer the mixture to a container and press cellophane wrap directly onto the surface to prevent browning.
  3. Toast the bread: When ready to serve, slice the French sourdough loaf into 10 slices, each about 1 inch thick. Toast the slices in an oven preheated to 400°F for 5 to 7 minutes, until they are crisp and golden.
  4. Assemble the toast: Spread each toasted bread slice liberally with the whipped goat cheese mixture. On one half of the slice, sprinkle a small amount of edible flowers for a decorative touch. On the other half, spoon the avocado and onion mixture generously.
  5. Add final garnishes: Optionally, sprinkle each slice with a small amount of sesame seeds and poppy seeds to add a delicate crunch and nutty flavor.

Notes

  • To keep the avocado from browning, press plastic wrap directly onto its surface after mashing.
  • Use rustic or sourdough bread as it holds toppings well and toasts nicely.
  • Edible flowers add a beautiful visual appeal but are optional.
  • Adjust salt and pepper to taste to complement the creaminess of the cheeses and avocado.
  • This recipe serves 10 slices, perfect for a small gathering or brunch.
