Ingredients

Noodles and Protein

  • 8 ounces dry wide rice noodles (or substitute 16 ounces fresh noodles)
  • 8 ounces chicken breast, shrimp, tofu, or king oyster mushrooms

Vegetables and Aromatics

  • 12 ounces Chinese broccoli (or substitute broccolini)
  • 1 heaping tablespoon chopped garlic (about 4-6 cloves)
  • ½ cup green onions, chopped
  • Salt to taste
  • Lime wedges for serving (optional)

Eggs and Oil

  • 2 eggs, whisked
  • 2 tablespoons peanut oil or coconut oil

Sauce

  • 2 ½ tablespoons soy sauce (or gluten-free liquid aminos)
  • 2 tablespoons oyster sauce (or vegan oyster sauce)
  • 2 tablespoons dark soy sauce
  • 1 tablespoon fish sauce (or vegan fish sauce)
  • 1 teaspoon rice wine vinegar
  • ½ teaspoon white pepper
  • 1 tablespoon sugar, honey, or maple syrup

Instructions

  1. Prep the rice noodles: Place the dry wide rice noodles in a baking dish and cover with boiling water. Stir occasionally until softened, about 15-20 minutes. Drain the noodles and toss with a little oil to prevent sticking.
  2. Make the stir-fry sauce: In a small bowl, whisk together the oyster sauce, soy sauce, dark soy sauce, fish sauce, rice wine vinegar, sugar (or honey/maple syrup), and white pepper. Set the sauce aside. Also, whisk the eggs separately and set aside for later.
  3. Stir-fry the protein and vegetables: Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Season the chicken (or chosen protein) with salt and pepper and sear each side until slightly colored and cooked through. Add the chopped garlic and Chinese broccoli stems, stir-frying until the stems are tender-crisp. Add the broccoli leaves and cook until wilted. Push all ingredients to one side of the wok.
  4. Cook the eggs: Pour the whisked eggs into the empty side of the wok and scramble until just set. Then, combine the eggs with the rest of the ingredients in the wok. Remove everything into a bowl and wipe out the wok.
  5. Stir-fry the noodles: Add more oil to the wok, then add the soaked rice noodles. Stir-fry the noodles to let the edges crisp and caramelize slightly, then allow them to soften again in the pan.
  6. Combine everything: Return the chicken, broccoli, and eggs to the wok with the noodles. Pour in the stir-fry sauce and gently mix everything together. Cook for another 1-2 minutes over medium heat until all components are hot and the sugars in the sauce caramelize a bit, creating a slightly smoky flavor. Stir in half of the chopped green onions and then turn off the heat.
  7. Garnish and serve: Garnish the Pad See Ew with the remaining green onions, Thai chili flakes if desired, and lime wedges for squeezing over before eating.

Notes

  • You can use fresh wide rice noodles if available; reduce soaking time accordingly.
  • Chinese broccoli (gai lan) is traditional, but broccolini can be a good substitute.
  • For a vegetarian or vegan version, substitute oyster sauce with vegan oyster sauce and fish sauce with vegan fish sauce.
  • Adjust the level of sweetness to your taste by modifying the sugar or honey quantity.
  • Adding Thai chili flakes is optional but adds authentic heat and flavor.
