These Asian Tofu Crumble Bowls are a flavorful and healthy vegetarian meal featuring crumbled tofu sautéed in a savory gochujang sauce, served over white rice with a refreshing cucumber and avocado salad. Ingredients

Tofu Crumble

  • 1 14 ounce block firm or extra firm tofu
  • 1 tablespoon olive oil
  • 3 tablespoons low sodium tamari or soy sauce
  • 2 tablespoons gochujang
  • 1 tablespoon honey
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons rice vinegar
  • 2 tablespoons water
  • 1 tablespoon sesame seeds

Rice Base

  • 2 cups cooked white rice

Cucumber Salad

  • 4 mini cucumbers, sliced
  • 1 tablespoon olive oil
  • Salt & pepper to taste
  • 1 avocado, cubed

Garnish

  • 1/2 cup cilantro, diced
  • 1/2 cup green onion, diced

Instructions

  1. Drain Tofu: Remove the tofu from its package and drain the excess liquid. Wrap the block in a dish towel and press firmly to remove additional moisture. No formal pressing is required—just remove as much water as you can for better texture.
  2. Grate Tofu: Heat a medium-large skillet over medium heat with 1 tablespoon of olive oil. Grate the tofu using a grater, then crumble it further with your hands to create a varied texture.
  3. Sauté Tofu: Add the tofu to the skillet and sauté for 10-15 minutes until it starts browning and developing a nice color and texture.
  4. Whisk Sauce and Simmer: In a bowl, whisk together tamari, gochujang, honey, toasted sesame oil, rice vinegar, and water until fully combined. Pour this sauce into the skillet with the tofu, reduce heat to low, and let it simmer for about 5 minutes to absorb flavors.
  5. Make Cucumber Salad: In a separate bowl, combine sliced mini cucumbers with 1 tablespoon olive oil, salt, and pepper. Toss well to coat. Gently fold in cubed avocado to finish the salad.
  6. Assemble and Serve: Build your bowls by layering cooked white rice as the base. Top with the tofu crumble, then spoon on the cucumber and avocado salad. Garnish with diced cilantro and green onion. Optionally, add a drizzle of chili crunch for extra spice and enjoy your vibrant bowl!
