This Applesauce Bread with Greek Yogurt is a moist and flavorful quick bread perfect for breakfast or a snack. Utilizing unsweetened applesauce and Greek yogurt adds natural sweetness and tartness while keeping the bread tender. The addition of warm spices like cinnamon and nutmeg, along with optional walnuts, creates a comforting and delightful treat that's easy to make and sure to please.

Ingredients

Wet Ingredients

  • 1¼ cup unsweetened apple sauce (homemade or storebought)
  • 2 large eggs
  • 1/4 cup vanilla Greek yogurt
  • 1/2 cup coconut oil
  • 1/2 cup fine cane sugar (or light brown sugar)
  • 1/4 cup light brown sugar
  • 1 1/2 teaspoon vanilla extract

Dry Ingredients

  • 2 cups all purpose flour (whole wheat or gluten free works too)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Optional

  • 1/4 cup chopped walnuts

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease or line a 9×13 inch loaf pan with parchment paper to prevent sticking.
  2. Mix Wet Ingredients: In a large bowl, combine the unsweetened applesauce, eggs, vanilla Greek yogurt, coconut oil, cane sugar, light brown sugar, and vanilla extract. Whisk these together thoroughly until the mixture is smooth and well combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, and ground nutmeg to evenly distribute the leavening agents and spices.
  4. Mix Wet and Dry: Add the dry ingredient mixture to the wet ingredients and stir gently until just combined to avoid overmixing, which can make the bread tough.
  5. Pour Batter and Add Walnuts: Pour the batter into the prepared loaf pan and, if desired, sprinkle the chopped walnuts evenly on top for added texture and flavor.
  6. Bake the Bread: Bake the bread for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean. If the top begins to brown too quickly, loosely cover with foil approximately 45 minutes into baking to prevent burning.
  7. Cool and Serve: Allow the bread to cool completely in the pan before removing and slicing. Serve and enjoy as a delightful snack or breakfast option.

Notes

  • Using unsweetened applesauce helps control the sweetness and moisture content.
  • Greek yogurt adds moisture and a slight tang, enhancing the bread's flavor and texture.
  • Optional chopped walnuts add a nice crunch but can be omitted or substituted with other nuts or seeds.
  • To make gluten-free, substitute the all-purpose flour with a gluten-free flour blend.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • The loaf can also be frozen for longer storage by wrapping tightly and placing in a freezer bag.
