Ingredients

Crepe Batter

  • 550 ml whole milk
  • 2 eggs
  • 1 tsp vanilla paste or extract
  • 250 g plain / all purpose flour
  • Butter for frying

Apple Pie Filling

  • 5 cooking apples
  • 50 g lightly salted butter
  • 2 tbsp brown sugar
  • 2 tbsp cane or granulated sugar
  • 1 tsp ground cinnamon
  • 3/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 1/4 cup water

To Serve

  • Ice cream (vanilla or brown butter malt recommended)

Instructions

  1. Make crepe batter: In a mixing bowl, combine 2 eggs, 550 ml of whole milk, 250 g of plain flour, and 1 tsp of vanilla paste or extract. Use mixing beaters, a food processor, or a blender to mix until smooth and well combined.
  2. Prep the apples: Peel and slice the 5 cooking apples into evenly sized cubes to ensure consistent cooking in the filling.
  3. Cook apple pie filling: Melt 50 g of lightly salted butter in a pan over medium heat. Add the diced apples, 2 tbsp brown sugar, 2 tbsp granulated sugar, and the spices: 1 tsp cinnamon, 3/4 tsp ginger, 1/4 tsp nutmeg, 1/8 tsp cloves. Stir well to combine all ingredients.
  4. Simmer apple pie filling: Pour in 1/4 cup of water, stir again, then cover the pan with a lid. Cook over medium heat for 10-15 minutes, stirring occasionally, until the apples are tender and caramelized.
  5. Cook the crepes: Heat a non-stick pan over low to medium heat and add a teaspoon of butter, allowing it to melt. Hold the pan at an angle and pour about 1/2 cup of crepe batter onto the pan, swirling it around to spread the batter evenly. Cook for a couple of minutes until the batter sets and is no longer shiny. Flip with a spatula and cook the other side for about 1 minute until golden brown.
  6. Plate and repeat: Transfer the cooked crepe to a plate. Remove the pan from direct heat momentarily to add more butter and avoid overheating before repeating the crepe cooking process with the remaining batter.
  7. Fill the crepes and serve: Place a crepe on each serving plate, spoon warm apple pie filling over half, add a scoop of ice cream, then fold over the edges of the crepe to encase the filling. Serve immediately and enjoy your delicious apple pie crepes.
