  • 1/2 tsp dried sage
  • Salt & pepper to taste

Maple-Mustard Glaze

  • 1 tbsp Dijon mustard
  • 1 tbsp maple syrup

Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C) to prepare for baking the meatloaf muffins.
  2. Mix Ingredients: In a large bowl, combine ground turkey, grated apple, breadcrumbs, egg, diced onion, dried sage, and season with salt and pepper. Mix thoroughly until all ingredients are well incorporated.
  3. Form Muffins: Divide the meat mixture evenly into a greased 12-cup muffin tin, pressing gently to shape each muffin.
  4. Prepare Glaze: In a small bowl, whisk together Dijon mustard and maple syrup until smooth.
  5. Apply Glaze: Spoon the maple-mustard glaze evenly over the top of each meatloaf muffin.
  6. Bake: Place the muffin tin in the preheated oven and bake for 25-30 minutes or until the internal temperature of the muffins reaches 165°F (74°C) and they are cooked through.
  7. Rest and Serve: Let the meatloaf muffins rest for 5 minutes after baking. Serve warm with optional mashed sweet potatoes or your favorite side dish.

Notes

  • Make sure to not overmix the meatloaf mixture to avoid tough muffins.
  • Use a food thermometer to ensure the turkey is fully cooked for safety.
  • Feel free to swap dried sage for fresh sage if available, using about 1 tbsp chopped fresh leaves.
  • The maple-mustard glaze adds a nice balance to the savory muffins but can be omitted if preferred.
  • These muffins reheat well and are suitable for meal prep throughout the week.
