Ingredients

Dry Ingredients

  • 100 g / 1 cup rolled oats
  • 100 g / 1 cup almond flour
  • 100 g / 3/4 cup rice flour (or buckwheat flour or spelt flour)
  • 1 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp sea salt
  • ¼ tsp ground vanilla or 1/2 tsp vanilla extract

Wet Ingredients

  • 100 g / 3.5 oz butter or coconut oil, at room temperature
  • 125 ml / ½ cup maple syrup or runny honey
  • 1 apple, rinsed
  • 180 ml / 3/4 cup cultured buttermilk (or yogurt)
  • 3 free-range eggs, separated

Topping

  • 2 apples, rinsed
  • 2 tbsp melted butter
  • 1-2 tsp cinnamon

Ginger-Spiced Yogurt

  • 250 g / 1 cup unsweetened yogurt
  • 1 knob (roughly 2.5 cm / 1 inch) fresh ginger
  • 1 tbsp maple syrup
  • 1 tbsp lemon juice

Instructions

  1. Prepare Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, rice flour, baking powder, ground cinnamon, ground ginger, sea salt, and either ground vanilla or vanilla extract. Mix thoroughly to evenly distribute the spices and leavening agent.
  2. Mix Wet Ingredients: In a separate bowl, cream the butter or coconut oil until smooth. Add the maple syrup or honey and blend well. Grate or finely chop the rinsed apple and add it along with the cultured buttermilk or yogurt. Mix to combine.
  3. Incorporate Eggs: Separate the 3 eggs. Whisk the egg whites in a clean bowl until stiff peaks form. In another bowl, lightly beat the egg yolks and add them to the wet ingredients. Stir well to combine.
  4. Combine Wet and Dry Mixtures: Add the wet ingredients to the dry ingredients and stir gently until just combined. Then carefully fold in the whipped egg whites to maintain airiness in the batter.
  5. Prepare the Topping: Slice the 2 rinsed apples thinly. Arrange the slices neatly over the top of the batter in the tray or baking pan. Brush the apples with the melted butter and sprinkle evenly with cinnamon.
  6. Bake the Cake: Preheat the oven to 180°C (350°F). Place the tray cake in the oven and bake for approximately 35-40 minutes, or until a skewer inserted into the center comes out clean and the apple topping is tender and golden.
  7. Make Ginger-Spiced Yogurt: While the cake bakes, grate the fresh ginger finely. In a small bowl, mix the unsweetened yogurt with grated ginger, maple syrup, and lemon juice until well combined. Chill until serving.
  8. Serve: Allow the tray cake to cool slightly after baking. Serve slices warm or at room temperature, accompanied by a scoop of the ginger-spiced yogurt for a refreshing contrast.
