Instructions

  1. Prepare the Pan: Grease or line a 9x5 inch loaf pan with parchment paper to prevent sticking and make it easier to remove the bread.
  2. Preheat Oven: Preheat your oven to 325°F (163°C) to ensure even baking.
  3. Mix Ingredients: In a large bowl, stir together the almond flour, baking powder, and salt. In a separate bowl, mash the overripe bananas, then beat in the eggs (or flax eggs if vegan) and vanilla extract. Combine the wet ingredients with the dry ingredients until the batter is smooth and well blended.
  4. Bake: Pour the batter into the prepared loaf pan, spreading it evenly. Bake on the center rack for 50 to 55 minutes, or until a toothpick inserted into the center comes out mostly clean but the bread remains moist.
