Crispy and flavorful Air Fryer Zucchini Chips make a perfect healthy snack or side dish. These golden-brown chips are coated with a seasoned breadcrumb crust and cooked to perfection in the air fryer, delivering all the crunch without the excess oil of traditional frying.

Ingredients

Zucchini Chips

  • 3-4 small zucchini, cut into ¼-inch rounds
  • ½ cup all-purpose flour
  • 2 tablespoons cornstarch
  • 2 large eggs
  • 1 cup unseasoned breadcrumbs
  • 1 tablespoon Italian seasoning
  • 1 teaspoon fine sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • ¼ cup freshly grated parmesan cheese
  • Olive oil or cooking spray, for spritzing

Instructions

  1. Prepare Dredging Stations: Grab three wide, shallow bowls or pie plates. In the first bowl, whisk together the all-purpose flour and cornstarch. In the second, lightly beat the eggs. In the third, combine the unseasoned breadcrumbs with Italian seasoning, sea salt, black pepper, garlic powder, and freshly grated Parmesan cheese, mixing thoroughly.
  2. Preheat the Air Fryer: Turn on your air fryer and set it to 400°F (200°C). Allow it to preheat for 5 to 10 minutes to ensure it reaches the ideal temperature for crisping the zucchini chips.
  3. Coat the Zucchini Rounds: While the air fryer preheats, dredge each zucchini round first in the flour and cornstarch mixture, shaking off any excess. Next, dip them in the beaten eggs, making sure they are fully coated. Finally, press each round into the breadcrumb mixture until well coated. Place the breaded zucchini rounds on a parchment-lined baking sheet to wait for air frying.
  4. Air Fry the Zucchini Chips: Place a single layer of coated zucchini rounds into the air fryer basket, avoiding overcrowding to ensure proper airflow and even cooking. Lightly spritz the tops with olive oil or cooking spray. Air fry at 400°F for 5 minutes. Then, carefully flip the zucchini chips, spritz the exposed sides with olive oil again, and continue cooking for another 5 minutes or until the chips are crispy and golden brown on both sides.
  5. Repeat in Batches: Depending on the size of your air fryer, repeat the air frying process with any remaining zucchini chips, following the same procedure to achieve uniform crispiness.
  6. Serve and Enjoy: Serve the crispy zucchini chips warm alongside your favorite dipping sauces such as marinara or ranch for a delicious snack or appetizer.

Notes

  • For extra crispiness, make sure the zucchini slices are evenly cut about ¼ inch thick.
  • Do not overcrowd the air fryer basket to ensure proper air circulation and even cooking.
  • You can substitute the all-purpose flour with a gluten-free flour blend to make this recipe gluten-free.
  • Use fresh parmesan cheese rather than pre-grated for better flavor and texture.
  • Leftover zucchini chips can be stored in an airtight container and reheated in the air fryer to regain crispiness.
  • Customize the seasoning blend by adding smoked paprika or cayenne for a spicy kick.
