Ingredients

Pumpkin and Gnocchi

  • 350g pumpkin, peeled and diced into bite-sized cubes
  • 500g gnocchi
  • 400ml vegetable stock
  • ¼ cup single dairy cream

Cheese and Nuts

  • 50g blue cheese or soft goat’s cheese
  • 50g mozzarella or cheddar cheese
  • 30g pecans

Herbs and Seasoning

  • 6g sage leaves
  • Pinch of salt
  • Pepper to taste
  • Small drizzle of oil (for coating sage leaves)

Instructions

  1. Prepare the Pumpkin: Dice the pumpkin into small cubes about 2cm in size to ensure they cook evenly and within the time frame.
  2. Air Fryer Initial Cooking: Place the pumpkin cubes in the air fryer basket or a suitable baking dish that fits your air fryer. Add 100ml vegetable stock, a pinch of salt, and pepper. Air fry at 170°C for 15 minutes until the pumpkin is tender but still slightly firm.
  3. Add Gnocchi and Cream: Add the remaining vegetable stock to the basket or dish, nestle the gnocchi evenly around the pumpkin chunks, crumble the blue or goat cheese over the top, and pour the cream evenly. Gently stir to combine.
  4. Main Air Frying Step: Air fry at 220°C for 12 minutes until the gnocchi and pumpkin are fully cooked and the mixture is bubbling.
  5. Add Cheese and Pecans: Sprinkle mozzarella or cheddar cheese and pecans on top, then continue air frying for 2 minutes until the cheese melts and turns golden.
  6. Prepare Sage: Toss sage leaves with a drizzle of oil to coat evenly, scatter them over the cheese and pecans, and air fry for an additional minute until the sage leaves are crisp and aromatic.

  • You can prepare this dish entirely in the oven if you don't have an air fryer by roasting and baking at the specified temperatures and times.
