Ingredients

Date Caramel

  • 1 cup packed medjool dates, pitted
  • 2 tablespoons creamy almond butter (or any nut/seed butter)
  • 1 tablespoon coconut oil, melted

Chocolate Coating

  • 1 cup chocolate chips, or an 8-ounce chocolate bar
  • 2 teaspoons coconut oil, melted

Instructions

  1. Soak Dates: Place pitted medjool dates in a bowl of very hot water and soak for 10 minutes to soften.
  2. Blend Caramel Mixture: Drain the softened dates and transfer them to a food processor or high-speed blender. Add the almond butter and melted coconut oil, then pulse until the mixture is completely smooth and creamy.
  3. Freeze Caramel: Line a 9×5-inch loaf pan with parchment paper and spread the date caramel evenly inside. Place the pan in the freezer for 2 to 3 hours until the caramel is firm to the touch.
  4. Slice Caramels: Remove the firm date caramel from the loaf pan by lifting the parchment paper. Place the caramel block on a cutting board and slice into 12 small squares.
  5. Melt Chocolate Coating: In a heat-safe bowl, melt the chocolate chips together with 2 teaspoons of coconut oil using either a microwave in short bursts or a double boiler on the stove. Stir until smooth and fully melted.
  6. Coat Caramels: Dip each caramel square into the melted chocolate, ensuring a full coating. Lift out carefully and place on a parchment-lined plate. Repeat with all pieces.
  7. Set Chocolate: Transfer the chocolate-coated caramels to the fridge and chill for 1 hour or until the chocolate has hardened and set completely.
