Deliciously simple and moist chocolate muffins made with just three ingredients: chocolate cake mix, pumpkin puree, and chocolate chips. These easy-to-make muffins are perfect for a quick breakfast or snack and require minimal preparation and baking time.

  • 1 (15-18 ounce) box chocolate cake mix

  • 1 (15 ounce) can pumpkin puree (not pumpkin pie mix)

  • 1 cup (170g) chocolate chips (plus more for topping)

Instructions

  1. Preheat and Prepare Muffin Pan: Preheat your oven to 350°F (177°C). Line a muffin pan with paper liners and spray them well with nonstick cooking spray or, if you prefer, grease the muffin pan directly if not using liners.
  2. Mix Ingredients: In a large bowl, stir together the chocolate cake mix and pumpkin puree until well combined. The batter will be thick. Then fold in the chocolate chips evenly throughout the batter.
  3. Fill Muffin Cups: Spoon the batter into the prepared muffin cups, filling each about two-thirds full. Optionally, sprinkle extra chocolate chips on top of each muffin for added chocolate flavor and visual appeal.
  4. Bake the Muffins: Bake in the preheated oven for 12-16 minutes or until a toothpick inserted into the center of a muffin comes out with just a few moist crumbs attached. Avoid overbaking to keep the muffins moist.
  5. Cool and Serve: Remove the muffins from the oven and let them cool in the pan for at least 5 minutes before transferring to a wire rack or serving. Enjoy warm or at room temperature.
