This vibrant and refreshing citrus salad combines three types of oranges with peppery arugula and fresh mint, dressed in a lightly sweetened citrus vinaigrette. Perfect as a bright, healthy starter or a light side dish, it comes together in just 15 minutes using fresh, simple ingredients to create a delightful balance of sweet, tangy, and herby flavors.

Ingredients

Citrus Fruits

  • 2 cara cara oranges
  • 2 naval oranges
  • 2 blood oranges

Greens & Herbs

  • 2 oz baby arugula (approximately 2 large handfuls)
  • 2 tbsp fresh chopped mint

Dressing

  • ¼ cup citrus juices (squeezed from leftover membranes of the oranges)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey
  • ½ tsp vanilla extract
  • ½ tsp kosher salt

Instructions

  1. Prepare Citrus Supremes: Carefully segment the cara cara, navels, and blood oranges by cutting away the peel and pith, then slicing between the membranes to release clean orange segments without skin. This technique is called supreming and ensures tender, juicy citrus pieces without any bitter rind.
  2. Combine Salad Ingredients: In a large salad bowl, combine the citrus supremes along with the baby arugula and freshly chopped mint leaves, distributing the flavors evenly.
  3. Make the Dressing: Squeeze the juice from the leftover citrus membranes to collect about ¼ cup of juice. In a separate bowl or jar, whisk together this fresh citrus juice with extra virgin olive oil, honey, vanilla extract, and kosher salt until well emulsified.
  4. Toss and Serve: Drizzle half of the dressing over the salad and gently toss to combine all ingredients evenly. Serve immediately to enjoy the freshest flavors, as this salad is best consumed right away and does not keep well as leftovers.

Notes

  • Supreming citrus requires a sharp knife and careful technique to remove only the membrane and pith but leave whole segments intact.
  • For more flavor variety, feel free to mix in other types of citrus like grapefruit or tangerines.
  • Leftover citrus juice can be saved for cocktails, dressings, or marinades.
  • Because of the fresh dressing and delicate greens, this salad is best eaten immediately and does not store well.
