Noodles and Vegetables

Instructions

  3. Stir-fry Vegetables: Heat 1 tablespoon of sesame oil in a large wok or skillet over medium-high heat. Add the white parts of the green onions and the chopped or julienned vegetables. Stir-fry until the vegetables are fork-tender, about 5 minutes, ensuring they maintain some crunch.
  4. Deglaze and Combine: Add 1-2 tablespoons of mirin to the hot pan to loosen any browned bits stuck to the bottom; this adds extra flavor. Then add the cooked noodles.
  5. Toss with Sauce: Pour about half of the prepared sauce over the noodles and vegetables. Toss everything together in the hot pan to evenly coat the noodles. Add more sauce if desired, aiming for a medium brown color on the noodles—not too light or dark.
