This 15-Minute Garlic Butter Chicken Bites recipe is an easy, flavorful one-pan dish featuring tender chicken breast pieces cooked in a buttery garlic sauce with herbs. Perfect for a quick weeknight dinner, this recipe delivers juicy chicken bites coated in a fragrant blend of oregano, basil, and paprika, finished with fresh parsley for a vibrant touch.

Ingredients

Chicken and Seasoning

  • 20 oz (1 ¼ lbs) boneless, skinless chicken breasts
  • 2 tbsp all-purpose flour
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp sweet paprika
  • ½ tsp salt
  • Freshly ground pepper to taste

Cooking and Garnish

  • 1 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 3 garlic cloves, minced
  • 2 tbsp parsley, freshly chopped

Instructions

  1. Prepare the chicken: Dry the chicken breasts thoroughly with a paper towel to ensure they sear properly. Cut them into 1-inch bite-sized pieces for even cooking.
  2. Season the chicken: Place the chicken pieces in a bowl. Sprinkle the flour, dried basil, sweet paprika, dried oregano, salt, and freshly ground pepper over them. Toss well until all the pieces are evenly coated in the flour and herb mixture.
  3. Heat the skillet: Warm a large cast iron skillet over medium-high heat. Add the olive oil and 1 tablespoon of butter. Allow the butter to melt and the oil to heat until shimmering.
  4. Cook the chicken: Add the chicken pieces in a single layer to the hot skillet. Let them sear undisturbed for about 3 minutes to develop a golden crust. Flip the pieces and cook for an additional 2 minutes on the other side.
  5. Add flavor: Reduce heat to medium, then add the remaining 2 tablespoons of butter, minced garlic, and chopped parsley to the skillet. Stir and cook for another minute until the chicken is fully cooked through and the garlic is fragrant.
  6. Serve: Remove the skillet from heat. Serve the garlic butter chicken bites immediately while hot. These pair wonderfully with rice, pasta, or a fresh salad for a complete meal.

Notes

  • Make sure the chicken pieces are cut evenly for uniform cooking.
  • Use a cast iron skillet or any heavy-bottomed pan to achieve a good sear.
  • Do not overcrowd the pan; cook in batches if necessary to keep the chicken crispy.
  • You can substitute fresh herbs with dried if preferred, but adjust quantities to taste.
  • For a gluten-free version, replace all-purpose flour with cornstarch or gluten-free flour.
